February 2026: Raspberry Mousse Dessert
It is still winter, and we have a lot of snow at the moment. It is nice to have a refreshing mousse, reminding us of last summer and make us long for the coming one.
Ingredients
200 g fresh or frozen
raspberries
25 g corn flour
80 g sugar
1 egg yolk
230 ml whipping cream
16 g vanilla sugar
Directions
- Blitz the raspberries in a saucepan
- If you don't like the seeds, strain through a sieve
- Add sugar, corn flour and egg yolk, and keep blitzing until combined
- Heat on the stove and keep simmering while continuously stirring, until the mass is quite thick
- Let the mixture cool
- Whip the cream with vanilla sugar to soft peaks
- Add the cooled raspberry mixture to the whipped cream and mix well
- Pour into glasses and decorate with some fresh raspberries
January 2026: Mulled Wine Slices
Mulled wine is a staple on all Christmas markets, but it is very warming and delicious all winter. Making these little treats make your winter days just a little bit more cozy... Happy New Year!
Ingredients
Slices
250 g butter
250 g flour
125 g sugar
1 packet (2 tsp) vanilla sugar
4 eggs
2 tbsp baking powder
150 g chocolate chips
125 ml mulled wine
Icing/Topping
150 g icing sugar
4-5 tbsp mulled wine
100 g chopped almonds
Oven
180C (160C fan), preheated
350F (320F fan), preheated
Directions
- Preheat oven to 350F (320F fan)/180C (160C fan)
- Using an electric mixer or kitchen machine, cream butter, sugar, vanilla sugar and eggs in a large
bowl - Sift flour and baking powder into a separate bowl
- Spoon by spoon, add flour to butter mixture
- Carefully add mulled wine
- Mix to a smooth batter
- Fold the chocolate chips into the batter
- Pour batter into a baking tray lined with baking parchment
- Spread and smooth out with a palette
knife - Bake for 20 minutes or until skewer comes out clean
- Take out of the oven and let cool in the tray
- In a bowl, mix icing sugar and 4 tablespoons of mulled wine
- Mix to a smooth, slightly runny icing (add more mulled wine if necessary)
- Pour icing over cool cake and spread with a palette knife
- Sprinkle almonds over the icing
- Once set, cut into small slices
December 2025: Dinkel-Rye Rolls in a Jar
This is a great present from your kitchen, since you do the sourcing of the ingredients, and your giftee gets the joy of baking. All ingredients but water can go together in the one jar, so this recipe is perfect! You could call it the IKEATM gift from the kitchen: Some assembly required ;-)
Ingredients
375 g Dinkel flour
175 g Rye flour blend (rågsikt)*
1 tsp sugar
1 ½ tsp salt
1 package (10-14 g) dry yeast
300 ml lukewarm water
Oven
220C (200C fan), preheated
Reduced to 190C (170C fan)
Note
* A rye flour blend is a mix of rye and wheat flours, and readily available in some countries. If you cannot get this, plain rye flour works as well
Directions
- Layer Dinkel flour, rye/wheat blend, sugar and salt into a mason jar (ca. 800-1000 ml capacity)
- If your giftee plans to bake the rolls within a few days, you can also add the dry yeast, but it is safer to attach the yeast in its original package separately
- Write a nice card with the following instructions:
- Place all ingredients into a bowl of a kitchen machine with a kneading hook
- Add 300 ml of lukewarm water
- Let the machine knead the dough for about 5-10 minutes
- Turn the dough out onto a lightly flowered surface and hand-knead for a further few minutes
- Form a ball, cover and let proof in a warm place for about 30 minutes
- Knock the dough back and cut into 8 to 10 equal pieces
- Roll dough pieces into balls and place on a baking sheet lined with baking paper
- Cut the tops with a sharp knife (e.g. 2 cross cuts or 3 parallel cuts)
- Brush the tops with some water
- Place a heat-proof bowl with some water on the bottom of the oven
- Bake for 8 minutes
- Reduce heat to 190C (170C fan)
- Brush the tops again with water and bake for another 8 minutes
